Crock-Pot Posole

Serves: 6 servings
 
Ingredients
  • 2 (15oz) cans white hominy, drained & rinsed
  • 2 (10oz) cans green enchilada sauce
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 2 teaspoons cumin
  • ½ teaspoons black pepper
  • 3 cups low sodium chicken broth
  • 1.5 pounds pork loin roast
  • Optional Toppings:
  • ½ cup chopped cilantro
  • 8 lime wedges
  • ½ cup light sour cream
Instructions
  1. In large crockpot, stir together hominy, enchilada sauce, onion, garlic, cumin, black pepper and chicken broth. Add pork and spoon hominy mixture over top. Cook on low for 8-9 hours.
  2. Remove pork carefully, shred, and return to hominy mixture. Serve with desired toppings.
