Freezer Breakfast Tacos

Ingredients
  • 1.5 cups frozen tater tots, prepared and cut in half
  • 1 pound turkey sausage
  • 8 eggs, lightly beaten
  • 2 tablespoons 2% milk
  • ½ teaspoon salt
  • Black pepper, to taste
  • 1 (16 oz.) can refried beans
  • 12 (6-inch) wheat or white tortillas
  • 2 cups cheddar cheese, shredded
  • ¼ cup cilantro, chopped (optional)
Instructions
  1. In a large skillet, brown sausage. Set aside.
  2. Add eggs to the skillet along with a small amount of oil if needed. Whisk until just set. Whisk in milk and season with salt and pepper.
  3. Spread beans down centers of tortillas.
  4. Top with sausage, eggs, cheese and cilantro.
  5. Fold in opposite sides of each tortilla, then roll up, burrito-style. Place, seam-side down, onto prepared baking sheet.
  6. Wrap individually in plastic wrap and place in freezer. Remove as needed.
  7. To cook: Remove plastic wrap and wrap in damp paper towel. Microwave on low 1-2 mins or until heated through. If baking, wrap burrito in foil and place in 350-degree oven until heated through, about 15 minutes.
Notes
- Add additional nutrition by serving your burrito with a fruit or veggies.
- Gluten-free? Use a gluten-free tortilla instead
- Vegetarian? Use a soyrizo instead of turkey
- Watching salt? Use plain ground turkey and remove the ½ tsp of salt to reduce the sodium per burrito to 640mg.
